Well, I had long been waiting to try the liquid of encuetir nuts, for four months, we did Maloles and I, but this time to add it to a dressing.

Today I prepared my favorite salad, which is as simple as arugula, walnuts and a little grated cheese. Well, I made it as usual, only I dressed it with extra virgin olive oil, emulsified with a little liquid from pickling walnuts and I loved it. It was as usual… But with a slight touch full of personality, a subtle woody flavor very appealing.

I was tempted to change the walnuts I usually put in, for some of the pickled walnuts. I have not dared in case it was too much flavor, and I think I have succeeded

*In the third photo you can see the bowl where I have put first two spoonfuls of juice from the pickled walnuts and then the olive oil

*In the fourth photo the dressing is already emulsified

Qué deliciosa se ve. Por cierto, ya tienes la intriga resuelta. Lo prometido es deuda.

Oh wow, that sounds absolutely lovely! 🥰 I can imagine that gentle, earthy note from the pickled walnut liquid blending perfectly with the olive oil. The balance must be amazing with the arugula and cheese. Now you’ve got me curious… do you think next time you’ll dare to use the pickled walnuts themselves in the salad? 😄

@lanamihajlovic I don’t know, I don’t know…. 🤔 I honestly think they taste too much like vinegar. Maybe a couple of them, along with more normal, raw nuts, yes that would be an option
