I have used semi-cured cheese and homemade quince, arranged in alternating layers to highlight the contrast of textures.

It is accompanied with floral honey, toasted walnuts and fresh mint leaves, seeking a balance between sweetness, saltiness and freshness.

I wanted to pay homage to the flavors of childhood, but with a contemporary presentation.

I remember from my childhood that my mother and grandmother used to give it to me with bread or alone.

In my house neither my mother nor my grandmothers have made homemade quince jelly, but I have been making it for a few years and we like it very much, when I make it the house smells like autumn already.
