Yesterday my kitchen was filled with autumn. The smell that the cooking gave off flooded my home and also my soul. It was like going back to childhood, to my grandmother Marina’s house when this season arrived. She used to make pumpkin jam, but something different. No skin, no seeds and cut into regular sized squares. This time something changed in my kitchen…

Paloma Ortiz ‘s recipe from the Day of the Dead Mexican Cooking course has given me a different and very attractive approach.

It is a simple recipe although for me the novelty has been to put the pumpkin as is, cut in this shape of wedges, with skin and seeds and above all cover it all with fig leaves to cook it.

The cooking went slowly, letting it cook until little by little the long awaited moment arrived. That moment of discovering the magic under the fig leaves was unique and exciting (I shared it in a video before this post). My heart was beating fast waiting to see the result and here it is.

I loved the recipe. I made it as is but I substituted the guava for quince because I couldn’t find it in my town.

It turned out very tasty and I assure you that it will stay at home forever 😋. Maybe I will present a version 2.0 which is in the process of testing but at the moment I don’t know if it will go ahead.

      I like Mexican cuisine❤

This is absolutely beautiful. Not just the dish, but the whole story behind it. The way you describe the aromas, the memories, the slow reveal under the fig leaves… it’s like reading a cozy autumn tale. And that touch of quince instead of guava, perfect seasonal twist! 😍

@soldamiani Muchas gracias Sol!

        • Your post is a warm hug wrapped in fig leaves and autumn spice. What a beautiful tribute to your grandmother Marina—how special that her memory stirred alongside the steam. The way you described that “moment of discovering the magic” gave me chills. Cooking with the pumpkin whole, skin and seeds intact, feels like honoring the ingredient in its entirety—so fitting for Día de Muertos.
Substituting quince for guava? Inspired! That kind of thoughtful adaptation is what makes a recipe truly yours. I’d love to see your version 2.0 if it comes to life—sounds like your kitchen is a place where tradition and creativity dance together.
