I have always liked to investigate about the gastronomic culture of cities or countries. Here I present to you some legs called “Patatas Macho”. They were created by an innkeeper from Cartagena called “Paco El Macho”. The people of the time say that between the 50’s and 80’s they were sold like hot cakes in a bodega in the center of Cartagena. Its preparation is very simple. Small to medium-sized potatoes are boiled in their skins and left to cool. Apart, a mixture of chilli peppers, salt, garlic, hot paprika and oil is made and fried in a large frying pan and then the peeled potatoes are added, turning them a few times so that they take the color and flavor of the mixture and are served with bread and wine or beer.

This is such a great story. I love when dishes carry the memory of a time and place with them.
