I present you my chocolate dish for this month’s challenge; after thinking a lot about the name, in the end I always kept the first one, because, I say, a dish with many chocolate elaborations, what better name than “Chocolat”? And I take advantage of this name to make a nod to the movie “Chocolat”, starring Juliette Binoche, Judi Dench and Johnny Depp, among many others. I also have to say that it is one of my four desserts called “The 4 desserts of the apocalypse”, since, if I had a restaurant, each season I would make a different one: spring, lemon and orange; summer, strawberries; autumn, pistachios; and winter, chocolate. Each one would be with several elaborations.

Let’s talk about “Chocolat”. To paint the plate I made an elaboration with a syrup/caramel and bitter cocoa on this line I sprinkled a dark chocolate ground, which is simply a chocolate sablé dough, on top of the ground I placed a dark chocolate ice cream with 72% cocoa and white chocolate chips, next to it I made a chocolate pyramid filled with white chocolate mouse, by the way, i infused the cream with citrus and cinnamon to give another approach to white chocolate, protecting the dessert I placed some crunchy dark chocolate with caramelized almond granules, surrounding the dessert I put the “bread” for when the ice cream melts and need something to dip it, a chocolate sponge cake with 50 % cocoa and finally I added some “coffee” beans, which soldiers hold the fort, which are actually dark and white chocolate. You will think that it is a dessert overload, but, on the contrary, everything is just right to make you want to keep on eating this “CHOCOLAT” dessert. I have to confess that I have put a little trap; in one of the elaborations I changed the “……..” by carob flour, with which formerly chocolate was made, do you know what it is? And what better plan than to close an evening with a good movie and a better dessert. Bon appétit, Buon appetito, Guten Appetit, Bom proveito, Goede Eetlust,qǐngxiǎngyòng. An aside: the last two photos. They are of the pyramid “rotated” to show its interior.

I love how you connected the dessert not only with the movie Chocolat but also with your own creative vision of the “4 desserts of the apocalypse.” It feels like a full story told in flavors and textures, and the plating really draws you into that narrative.

          ¡Antonio! 👋
