      Yesterday, @lanamihajlovic posted a pasta dish that awakened the pasta monster in me. And I had no choice but to prepare some tagliatelle carbonara today 😅🍝🔥🩷.

          @fabrizio-vindigni please, I would love to !!!!

          Let me tell you how I make it, and you tell me if I should change anything: I beat a mixture of whole eggs and yolk. I add black pepper generously and grated parmesan (where I live it’s easier to find parmesan than pecorino). I also add the guanciale (or bacon if I have not found guanciale… things that happen frequently)

          I cook the pasta and when it is ready, I drain it reserving some of the water.

          I put the pasta back in the pot, add the egg and cheese mixture and add some of the cooking water. I mix until it has texture.

          This time I used another cheese because I didn’t have Parmesan, and it didn’t give the result I would have liked, but at least it took away the pasta monkey 🤣.

          Tell me honestly what I’m doing right and what I’m not 🙌.

          • @beatriztorijagmail-com you’re on the right track. Carbonara is an eeeeeasy easy dish but there are some things you need to get right. Here’s my recipe made super fast:

            1. Toast black peppercorns in a pan then grind them. If you wave just powder, toast the powder

            2. mix 1 yolk and 25g of PECORINO ROMANO (strictly. No parmesan no other cheese. Pecorino romano or semi-hard pecorino) for every 80g of pasta (80 to 100, according to how hungry you are). In the end, add another yolk “for the pan”. It’s tradition. F.e. for 160 – 200g of pasta you use 2 yolks + 50g of pecorino + another yolk

            3. bring water to a boil, add the pasta.

            4. on a dry and hot pan add GUANCIALE (strictly). Let him sweat till golden brown. Separate meat from the melted fat. Dry up the meat and bring it to room temp. This way it will be hell crispy

            5. when pasta releases some starch, put 1-2 tablespoon of pasta water into the eggs. Mix it up again and add pepper. You’ll get a fab cream

            6. Put your al dente pasta in a bowl, add the cream and the guanciale fat, mix it up well. Save some cooking water you can use if the pasta gets too dry. DO NOT do this in a pan or a pot.

            7. portion, plate and add the crispy guanciale directly on the portion. If you wish add more pecorino.

            bon appetit

              @fabrizio-vindigni muchas gracias, Fabrizio 🙌🙌🙌. La próxima vez tostaré la pimienta y añadiré el guanciale crujiente por encima en el último momento.

              El problema es que donde vivo a veces consigo pecorino y guanciale, pero no siempre, y me veo obligada a buscar alternativas 😅

          @beatriztorijagmail-com ¿Qué buena pinta tiene esa pasta? ¿Cómo los haces, con nata o con yema de huevo? Una vez pude comprar guanciale y los hice con una receta.ta. auténtica y me transportó a Italia.
