• First attempt at a new plated dessert. Whiskey genoise, white chocolate cheesecake, elderflowers consomme, pop caramel foam, figs sorbet as a sauce and as insert in the cake. Any suggestion?

Fabrizio, impressive first attempt 👏 Here are some plating-focused notes:
The vertical build creates impact, but balance could be refined so garnishes don’t overshadow the centerpiece.
The honeycomb-style tuile adds texture but consider varying size/height for more rhythm on the plate.
Color contrast is strong; maybe introduce a green/herbal element to freshen the composition.
The wide-rim plate frames well, but central placement could be slightly off-center for a more dynamic look.
I’m tagging @chris-goddard @kevin-godbee @loles-mhotmail-com and @bahar-gh127 , who are real wizards in plating, so they might drop their insights too 🙌

@soldamiani Hello Fabrizio and Sol. First of all, congratulations because the dessert is awesome. I like it already the way you have it, but here’s one more option: how about a larger, rounder tuille to place on top of the sphere? It would add geometry to the dessert. On that tuille could be placed some white elderflower (as a consommé, to give continuity, although I don’t know if you can get them now, where I live the season is over), and also some color detail, a green leaf for example

In my head I see it… But I do not know if I’m explaining myself well 🤔.

        • Fabrizio, I think this looks great. I agree with Beatriz and like it as you have it. I’m not sure about adding something green, but a mint leaf might work. I can also visualize some gold leaf harmonizing with the colors and textures. However, as I said I think it’s strong as is.
