Field bread single format, 75% hydration

I am watching Lutz Geißler’s bakery basics course and there was something in particular that caught my attention; bake the bread with the closure facing upwards

Doing this generates two things that enhance the baker’s eye

Firstly, the base of the bread is baked in a more uniform way and on the other hand, it reveals a natural expansion of the dough, without any kind of cut, you can notice if you have shaped it correctly, if it was too loose or too tight, if you did not close it properly

Although it is an introductory course I recommend it even for people who already have an advanced level and not only this, any introductory course either in cooking, pastry, bakery

Since each chef has a different philosophy, each country has different parameters that will help you better understand the ingredients and processes you are working with, I would recommend this course to anyone who already has an advanced level

In this case Chef Lutz talks about how in Germany the percentage of ash in the flour is considered, in other chef courses of other nationalities you can hear about or emphasize other parameters such as the percentage of protein, gluten strength, flour refinement
