I know that I have repeated the tuna, that the dish is the same as the tartar, but I will say in my favor that, since I finished Ricket’s Plating Course, my goal is to present different ingredients in different ways. I have called this dish “Tataki time”. I hope you don’t see any similarity with tartar, but as Grace Hopper said, “I’d rather ask for forgiveness than ask for permission”. This is a lightly grilled seared tuna tataki with a black sesame batter, cherry tomatoes, kimchi mayonnaise, wakame seaweed and, in the center, a little avocado cream. I promise the next dish won’t have tuna on it. Hahaha

Jajaja

I like the name Tataki time and that it resembles a clock. It could use something in the plating to break up the very structured layout, such as a sprinkling of copped parsley or chives around the edges and randomly dropped about criss-crossing the center.

Hahaha, no need to apologize… when tuna looks this good, no one’s complaining. Love how you turned it into “Tataki time” with the sesame crust and that vibrant plating.
