      Lasagna: A Geography of Comfort

When I prepare lasagna, I feel as though I am drawing a map. Pasta sheets become landscapes, béchamel the mist that softens their edges, ragù the winding roads of memory. Layer by layer, the world arranges itself… mountains of flavor, valleys of warmth, horizons of waiting.

There is a strange alchemy in this dish. It teaches that everything, no matter how different, can coexist: meat and milk, softness and crunch, time and hunger. In the oven, all contradictions surrender, melting into something whole, something that embraces.

When I finally cut into it, lasagna feels like a house where everything contradictory has learned to live together, and where comfort always waits at the table.
