The best sauce I ever made was a roasted tomato sauce. I made a double veal stock first, then roasted tomatoes and garlic cloves in the demi glace. I strained the liquid, reduced the sauce and it was the most amazing thing I’ve ever tasted. But for every-day, store-bought sauce, chipotle hot sauce is my favourite!
