      Eggplants in vinegar

It’s been a long time since I cooked them like this and we love them. These are the eggplants that were given to us a few days ago along with other things. Unfortunately we finished eating them today but we enjoyed them all week long. They were delicious!

They have fennel, bay leaf, salt, cayenne, paprika, garlic, tomato, cumin, vinegar and water to cover. Roasted red bell pepper is added, but this time I didn’t have any. Once cooked, they are left in the refrigerator for three days so that they take the seasoning well.

      • Maloles, your description makes me want to reach straight for a jar! The combination of fennel, bay leaf, cayenne, paprika, garlic, tomato, cumin, and vinegar sounds like such a vibrant mix of aromas and flavors. I can just imagine the eggplant soaking up all that goodness over three days in the fridge, becoming tangy, spiced, and full of depth. No wonder you enjoyed them all week!

That sounds absolutely mouthwatering 😍 Eggplants in vinegar with all those spices must be a true flavor bomb after three days of marinating. I can imagine how addictive they were if they barely lasted a week! Next time with roasted red pepper, they’ll be even more irresistible
