Instead of roasting them in the traditional oven, I wanted to try to prepare these kid shoulders on the barbecue, with indirect heat, and controlling the airflow so that the temperature would not go above 180 – 190°C. With walnut wood and branches of thyme and rosemary to enhance the smoked flavor.

They turned out delicious… The fire and the smoke bring such a particular flavor and nuances to the meat

        • Beatriz, that sounds absolutely mouthwatering! The way you managed the heat so precisely and infused those kid shoulders with walnut wood, thyme, and rosemary—pure culinary craftsmanship. Barbecuing with that kind of finesse brings out such deep, rustic flavors. You didn’t just cook—you orchestrated a smoky symphony. Well done!👩‍🍳🌿

Your passion for technique and flavor is so inspiring. I’d love to hear what you’re experimenting with next!

Wow, those kid shoulders look incredible on the grill! 🔥You can almost see how the smoke and herbs have infused the meat just by the color and texture. The caramelization on the outside promises so much flavor, while the indirect heat must have kept them beautifully tender inside. A true feast for the senses! 👏
