      Octopus aguachile

In this new chapter of Scoolinary’s greenest challenge, I wanted to travel to Mexico with this aguachile… the Mexican cebiche, they say. From the respect to the classic recipe, I have prepared a version in which I have changed the shrimp for octopus.

Along with the pieces of this small and delicious cephalopod, two traditional ingredients of aguachile: red onion and cucumber cut into small and smooth pieces. Next to them, the tips of some wild asparagus.

The secret is in the juice: a jalapeño bell pepper, a good bunch of freshly cut coriander and lime juice. All crushed.

To maintain the freshness of the dish and the green color, I shredded the cilantro, jalapeño and lime just a minute before assembling the dish. And the asparagus tips I had them five or seven minutes in very cold water, with ice, to maintain their smoothness… when incorporated raw they are the crunchiest ingredient in the dish.

Switching shrimp for octopus was such a good call, it gives the dish a bit more character and bite. The colors pop so nicely with the purple onion, green asparagus tips, and that bright, almost electric juice from the cilantro, jalapeño, and lime.

I like how you’ve kept the crunch from the vegetables while letting the octopus shine. It feels super fresh, bold in flavor, and at the same time light enough that you’d happily go back for a second plate.

¡Hola Bea!
