From the Matcha Tea Patisserie course

Matcha tea mousse with pistachio crumble and freeze-dried raspberry.

It has happened to me as to Jorge and I guess that my Matcha is not of the best quality because I expected it greener :S Still with the mixture of white chocolate and the sweetness of the crumble it is easy to eat. For the photo I liked it almost better without the strawberries and hence my super pistachio cream points, sorry 😅.

I will keep trying recipes with tea because I have the almost whole jar from the herbalist but I’m not quite convinced by the taste …..

Chef Laura, your second entry to the #GreenChallenge continues to show that mix of technique and sensitivity that we already saw in your debut 🌿✨. The heart-shaped mousse has a flawless finish, with crisp lines that catch the eye. The pistachio and freeze-dried raspberry crumble gives it a chromatic and textural counterpoint that elevates the whole. About the color, beyond the intensity of the matcha, you achieved a minimalist and elegant aesthetic that works very well. And it is interesting that you try two presentations: with strawberries the dish gains freshness and vitality; with dots of cream, minimalism and focus. The most valuable thing is that you keep exploring and questioning ingredients that don’t quite convince you. That process of trial and error is also part of the professional path. What do you think you might fall more in love with tea in pastries: its flavor on its own or when it dialogues with other ingredients such as citrus or nuts?

how beautiful the mousse turned out with that heart shape! The combination with the crumble and raspberry looks very lovely. It’s true that matcha can vary a lot depending on the quality, have you thought about trying a ceremonial grade brand to see if you notice a difference in color and flavor?

          Ohhh this looks gorgeous!
The geometric heart shape makes it look so modern and elegant, and the soft green tone actually works beautifully.

Matcha tea is a product that you either love or hate. That’s the beauty of the product, to get the most out of it. I’m going to give you a tip that I will never admit I said it, hahahahahah. If you can’t buy a high quality one, you can add a few drops of food coloring to bring out the color. I know that many people will not agree with me, but I say, don’t you add food coloring to rice to make it yellow, or dyes to hamburger buns to make them a different color. I don’t think it’s a crime, or cheating, we play with the ingredients we have and use some others to enhance the product. When we grind a salmorejo we lose the intense red color, I am not saying that we have to add coloring, but it is no longer red, tomato. I hope no one feels offended by this.

            • @cecu6669hotmail-com I totally agree with you, as long as one has a soft touch when adding colourings, too much can overdo it and make the final product way too bright and fake looking.

Genial !
