Pickled celeriac tartar with liquid salad and basil oil
I wanted to recreate a vegetable feast: full of the colors of the garden, green in essence and with shades of bright colors. And full of flavor: the aniseed of the celeriac, the sparkle of the pickled vinegar, the delicacy of the lettuce, made creamy, the aromatic basil, the soft spiciness of the arugula, the more present of the red chili, the freshness of the mint…
To make this dish, I first pickled the peeled and diced celeriac in a mixture of salt, sugar and white wine vinegar for six hours.
Then, once the pickling was removed, I osmosed the celeriac with crushed basil and oil (without filtering, so that the celeriac would have those attractive green flecks). I vacuumed it for four hours.
I prepared a lettuce cream that serves as a base for the dish. On top, the celeriac cubes. The whole is decorated with mint leaves, arugula, a bit of red chili, oregano flowers and other edible flowers. The dish is finished with a good splash of basil oil, filtered after blanching the basil to preserve its chlorophyll.
The result is very rich and surprising. Very aromatic and fresh.

Wow, this looks absolutely stunning! ✨I love how you’ve managed to capture the whole garden on a single plate… it’s fresh, colorful, and so full of life. The little green flecks on the celeriac give it such a natural, playful look, and those flowers and herbs make it feel like you’ve literally served spring in a bowl. Knowing you, I’m not surprised 😊 Only you would think of turning celeriac into something this elegant and aromatic. Honestly, it doesn’t just look delicious, it looks like art. I’d happily be your official taste tester any day. 😍

@lanamihajlovic ohhh, Lana, you thrill me. The truth is that it was delicious. After the photos, when eating it, I was laughing by myself, thinking that only one element was missing to capture the essence of the whole garden… some little bug 🦗🐞🪲🤣🤣🤣🤣🤣🤣

@lanamihajlovic ohhh, Lana, me emocionas.

@beatriztorijagmail-com 😂😂😂 I mean you could have invited them to dinner instead of eating it all by yourself. Even bugs have a soul 😁
