      Zucchini cannelloni with vegetable bolognese.

      #GreenChallenge
      Level: Pro.

Although I am a cook, I have never worked in a big restaurant and I have never been able to make my own dishes. The dishes I make are at a private level and I make them at home; I have a great imagination for cooking. I have learned by taking courses, reading books, but it has been here at Scoolinary where I have developed many techniques and learned many dishes from all over the world. The dish I present to you is a zucchini cannelloni stuffed with vegetable bolognese and is topped with a creamy béchamel sauce. The green color is given by a reduced spinach broth. It is decorated with black sesame, chili threads and pumpkin seeds. The zucchini strips are steamed and placed on top of each other. The vegetables in the bolognese are garlic, onion, ginger, carrot, zucchini, red bell pepper, green bell pepper and ripe tomatoes. I seasoned it with a little yakiniku, which is a Japanese barbecue sauce that gives it a great umami touch. At the end, I added a little xanthan gum so that the texture is a little dense and that the filling does not come out of the cannelloni, since it will not be baked in the oven. Sorry for the photos, for not having turned out as good as the dish is tasty, hahaha. I hope you like it.

🤞Cruzo los dedos por aquí también. Ojalá puedas cumplir el sueño de varios. Abrazote

I love how you’ve taken a classic Italian concept and given it a fresh twist. I’d say this #GreenChallenge entry is more than just tasty… it’s a declaration of your style.
