Sautéed peas with pea sauce and vanilla oil.

On the one hand you make a sauce with peas, oil, water, lemon juice and lemon zest. Put all the ingredients in a blender, blend and then strain.

On the other hand, poach the onion in a frying pan with butter and oil without browning it. When it is ready, add the peas and sauté.

Remove from the heat and add the sauce and, once it has been served, add a little vanilla oil on top.

The vanilla oil is prepared by macerating vanilla bean seeds in sunflower oil (in my case I used vanilla paste) for several hours.

It is a version of a Joan Roca’s dish.

In my case I used some canned peas that I had in the fridge. As these are not as green as fresh or frozen peas, to give a greener color to the sauce I added some of the spirulina paste I made for the focaccia by hydrating and dissolving spirulina strands in a little water.

To finish the dish I put a little vanilla oil on top and some spirulina strands.

They were very tasty, and next time I will make them with fresh peas when they are in season or with frozen peas.

This is such an original and elegant idea for the #GreenChallenge. 💚 I love how you’ve layered the flavors… the sweetness of the peas, the brightness of lemon, and then that unexpected hint of vanilla oil to make everything more aromatic. Using spirulina to boost the color was a clever touch, especially with canned peas, and it ties in beautifully with the focaccia.

¡Mercedes, qué delicia seguir viendo tus versiones verdes! 💚
