Creamy Green Harmony – Broccoli & Pea Potage
#GreenChallenge
Level: AmateurIn the height of summer, while the sun relentlessly pressed down on the city, this bowl of potage felt like a green breath of relief. Broccoli and peas, bathed in the light of the hottest days, held on to the vibrancy of their color, untouched by the scorching air. The cream melted into spiral trails, like summer clouds stretching across the sky before vanishing, while pumpkin seeds and almonds brought quiet bursts of crunch, like the rustle of leaves when a gentle breeze finally tricks August.
The golden, fragrant bruschetta crackled under the fingers, soaking up butter, olive oil and a hint of garlic, ready to be dipped into the creamy scent of the garden. And while outside the hot day urged us to seek shade, inside, this soup carried a promise… that even in the fiercest heat, nature still knows how to refresh and feed us with colors that never fade.
- Techniques: blanching, ice bath, multi-phase emulsified blending for a satin-smooth texture
- Texture balance: cream, seeds, toasted pumpkin seeds and almonds as a contrast to the creamy base
- Aromatic dimension: finely chopped parsley and green pepper for freshness, and a pinch of crushed red pepper for subtle warmth
- Garnishes: aromatic bruschetta bread (butter + olive oil + garlic) for a crunchy accompaniment
The result is a bowl that communicates in layers. From the gentle chlorophyll introduction, through the creamy middle, to the crunchy and spicy finishing notes. In this dish, green is not just a shade, but an identity. Inspired by the idea that green on the plate can be transformed into a story.

“That even in the fiercest heat, nature still knows how to refresh and feed us with colors that never fade.” is a GREAT line, dear 🌿 It perfectly matches the visual poetry in your plating. The spiral cream design is so clean and draws the eye right to the heart of the bowl, while your choice of garnishes gives both color and texture contrast. The bruschetta adds a rustic, inviting touch — and that golden sear is spot on. Truly mesmerizing!
If I could suggest one refinement, it would be to slightly tighten the crop or adjust the angle so the bread frames the soup without pulling too much focus. That would This is a gorgeous Green Challenge entry that reads like both a dish and a story.

@soldamiani Dear Sol, your feedback means the world to me, especially knowing how much I admire your own work. I love your suggestion about the crop. You’re right, it could help the bread frame the soup better without stealing the spotlight. I’ll keep that in mind for the next shot! 😘

Throw me a couple of those bowls… we’re flying, to share smiles in silence as we gobble, the crunch of bread, August afternoons in green, and a bit of Serbian summer 🥰.

Ponme un par de esos tazones… que vamos volando, a compartir sonrisas en silencio mientras engullimos, el crujido del pan, tardes de agosto en verde, y un poco de verano serbio 🥰
