      Spaghetti with pesto

This sauce with a deep green color thanks to the basil, intense flavor from the Pecorino Romano, garlic and olive oil; and subtle delicacy from the pine nuts, could not be missing in a ‘green’ challenge.

Originally from Liguria, the capital of Genoa, in northern Italy, pesto is one of the most famous – and appreciated – sauces in the world. At home we love it, we always prepare it with spaghetti… although it is also perfect to brighten up a baked potato, some gnocchis…

Nowadays it is prepared in a food processor, blender or food processor, but in the past, the Italian nonnas used to make it in a mortar and pestle. In fact, pesto derives from ‘pestare’, which means to pound.

The ingredients of the sauce are: basil, extra virgin olive oil, garlic, pine nuts, pecorino romano cheese, parmesan cheese and salt. First crush the basil, garlic and pine nuts with the olive oil and emulsify. Before adding the cheese and working the mixture a little more. Everything should be mashed, but let the texture of the ingredients show a little. For me, that is the secret.

And you guys, do you also love basil?

This is such a classic, but you’ve presented it with so much warmth and detail that it feels like we’re right there in your kitchen. I love how you’ve woven in a bit of history with the Ligurian roots and the old “pestare” method, it gives the dish an extra layer of charm. The way you describe the texture, leaving just enough character in the basil, garlic, and pine nuts, really captures what makes pesto special.
