Spirulina Sourdough Focaccia with Onion, Blue Cheese, Walnuts and Raisins.

It is made with sourdough to which I put some spirulina strands that when hydrated gives it a greenish color.

The first fermentation was done in the refrigerator overnight.

The focaccia recipe is from Martino Beira’s Sourdough Baking Course.

To calculate the amount of dough according to the molds I had, I followed the formulas explained by Luigi di Domenico in his Course on Focaccias.

In this case I multiplied by 0.6.

I tried to make it marbled, but it is not very noticeable in the final result. To do this I left half of the dough as is and the other half I added part of a paste that I made by hydrating spirulina strands in a little water and dissolving them with a mortar and pestle.

To finish it off I put a little Vanilla Oil on top (I prepared it by macerating vanilla paste in sunflower oil for several hours) and Crunchy Spirulina Strands.

The spirulina not only gives it that subtle green hue but also makes it unique from the very first glance. I love the flavor combination you went for, it’s that perfect mix of savory, sweet, and earthy. Even if the marbling isn’t obvious, the whole concept feels original and full of personality.
