      Aioli potatoes with parsley

      Perhaps this Spanish tapas classic is a simple recipe, but I wanted to pay homage to it as my first participation in this green challenge. To two basic -and essential- ingredients in Spanish cuisine: garlic and parsley.

      In Spain we say that someone “is the parsley of all sauces” to refer to one that is everywhere. Yes, we use parsley for just about everything. And with that vibrant green color it has, it had to be the protagonist.

      Aioli potatoes are prepared with boiled potato, seasoned with the sauce and with fresh chopped parsley on top… very generously.

      To be honest, I have to confess that I have cheated a bit with the alioli sauce, because when I am in a hurry I prepare a traditional mayonnaise sauce, with mild olive oil, salt, egg and a few drops of lemon juice, to which I add garlic. But the traditional aioli sauce is different, it is made exclusively with garlic, oil and salt. Its name comes from the Catalan ‘all i olí’, garlic and oil. In the old days it was prepared in a mortar, crushing garlic and adding oil in fine threads until it emulsified. You have to have arm and patience, but it is delicious.

        Me encantan las patatas con alioli.
        Y hay otro dicho que dice : No le falta ni un perejil 🌿 ( cuando alguien se arregla mucho ) 🤣🤣
        Pues eso, a tus patatas no les falta un perejil ! Ahora mismo me comía yo ese bol de un tirón 🥰👏👏👏

        i love to see you around here joining the #GreenChallenge! 💚 I like that you focus on paying homage to your gastronomy from simplicity, which also has its value and its history. That defense of garlic and parsley as everyday icons struck me as both honest and tasty. But tell me that one submission won’t satiate your ravenous hunger to participate in a challenge where almost the (green) sky is the limit! What’s the most unexpected thing you’ve ever cooked using parsley as a main ingredient? I’m sure that this won’t be your only surprise… 😉 If you’re up for it, share this tapa in your stories and tweet it to @scoolinary_es. More than one will want to copy your snack! 🌿🥔

        I can totally picture you, in full “I’m in a hurry” mode, skipping the arm workout with the mortar and going straight for the mayo hack. 😁 And honestly, no one’s complaining when it tastes that good. Simple, a bit cheeky, and guaranteed to disappear from the plate in record time. P.S. I looooveee this bowl. ❤

          @lanamihajlovic hahaha, yeah, totally 🤩.

          Isn’t it beautiful? I bought it years ago during a vacation from a craftsman. And today I’m sorry I bought just one 😅.
