thank you for sharing this Sunday snack with so much flavor.
Your papas bravas have that homemade look that invites you to sit down with a drink and enjoy without rushing. The combination with the bread and the wine gives it the perfect touch for a relaxed table.I love to see what you cook, with that warmth that comes through in every dish.Don’t stop doing it!!!. ✨

I am tired of seeing in restaurants how they mistreat our gastronomic culture with pot rooms or the already famous expression “FALSE” vegetable lasagna, for example, or also the famous “OUR WAY”. Patatas bravas with sauce in our own way. I am very much in agreement with inventions in the kitchen, but I do not agree with using a traditional recipe just to use its fame. Things are called by their name and you have to do some research on gastronomic culture. Why not research on the creation of bravas, tortilla de patatas or paella? Which, by the way, the container where rice is made is called paella and paellera/o are the people who made rice in the old days. Besides, I think, but I am not very clear, that the only rice that can be called paella is the Valencian one; the others are rice with things. “Rice with seafood”, “Rice with rabbit and snails”. But although the name is important, you can pass a little; what I do not see with good eyes are the expressions “FALSA” and “A NUESTRA MANERA”. If you invent a recipe, give it a name and don’t use a famous recipe to get people to ask for it. In the restaurant where I work they make a “fake risotto” that is actually tender wheat; it has cream, truffle, wheat, mushrooms and parmesan, and they call it “fake mushroom risotto”, but it is a real aberration.but it is a real aberration, because it has no rice, the broth is only cream and it is not as buttery as an authentic Italian risotto, and they add kimchi mayonnaise and gaucho sauce to the bravas, another aberration to call them “patatas bravas” to potatoes with two sauces. Well, let’s call a spade a spade, this is getting out of hand. By the way Beatriz Torija, a traditional recipe, with its name and its authentic sauce. They look great. Congratulations and thank you for not disrespecting a traditional dish of our cuisine. Do not take this comment as a criticism; it is rather a reflection to do things right. But do keep inventing recipes, it is the future, without forgetting tradition.

Sorry for my long and critical comment. Although I think Beatriz’s dish is amazing, I took the opportunity to give a slap on the wrist to those new cooks who, copying the great chefs, want to make their way in this difficult world, although passionate, which is the hospitality industry.
