Lately I’m in salad mode, looking for new ideas, based on what I have at home. This is the last one I have prepared. It is a salad with tender sprouts and spinach with grilled peach, feta cheese, peach vinaigrette (made with peach, olive oil, honey and balsamic vinegar) and caramelized puffed brown rice.

The original recipe for the vinaigrette calls for lemon juice but since I didn’t have any lemons I didn’t add any.

It was very tasty and the rice gives it a fun and crunchy touch.

what an original and fresh combination, Mercedes! I love how you took advantage of what you had at home to create such a colorful and balanced salad. The touch of caramelized puffed rice sounds spectacular, it must add a delicious texture. How did the vinaigrette turn out without the lemon? Do you notice it lacked acidity or do you think the peach made up for it well?

Thank you very much Sussan. The vinaigrette without the lemon was tasty but it is true that it would have been good, it lacked a touch of acidity.
