      Zucchini spaghetti with vegetables

The spaghetti is made with a vegetable sharpener, it has sautéed mushrooms, onion, a few points of salmorejo, grated garlic, pitted black olives, white pepper and parmesan.

The spaghetti is a minute lde cooking, they have to be al dente, the salmorejo gives a very rich point.aove the sauteed mushrooms.

      This delicious is eaten alone.

no doubt in my mind that it eats itself, Mercedes, Stagier level! 😍🎊
The composition has a lovely rhythm between the green tones and the contrasts of the olives and the golden mushroom. The natural light gives a very fresh feel to the dish. and those dots of salmorejo are the most! 🌟

Your dish conveys a lot of intention and freshness. The zucchini spaghetti has good visual texture and the dots of salmorejo add chromatic contrast. One small adjustment: you could lightly sauté the garlic before incorporating it, to soften its intensity and add rounder nuances. The olives add an interesting saline profile, although you could try chopping them finer to integrate them better.

how did you handle cutting the zucchini so it doesn’t release excess water? This is a common challenge when working with raw or semi-cooked vegetables.

i’d love to see how you evolve your plating! Have you considered experimenting with vegetable chips or crunchies to add texture and height? Thanks for sharing with the community.💫

@Sussan Estela Olaya thank you very much Sussan for your advice, when I grated the garlic I pass through the oil, a couple of seconds.

The zucchini I also put it on a cloth and drained the water, although I have not put it.

It did release a lot of water, although I have not edited it

what a great looking dish! 😋 I like the contrast of colors of the ingredients. The golden brown of the mushrooms and the dots of the salmorejo enhance the dish.I keep the idea, it has to be delicious

The zucchini spaghetti looks so fresh and light, and I love the idea of adding salmorejo for that creamy, flavorful contrast. The combination with mushrooms, olives, and parmesan makes it feel indulgent yet wholesome. Definitely a dish that shines all on its own ✨
