      Vegan Pistachio Ice Cream.

I based it on the vegan hazelnut gianduja ice cream from Máximo Cabrera’s Vegan Ice Cream Course.

It is decorated with pistachio praline and pistachio pieces.

It is made with a raw cashew nut cream base to which I added pistachio paste, salt, cocoa butter and agave syrup.

It is churned with the turbinado technique with the hand mixer.

An ideal ice cream for Pistachio lovers.

Hi Mercedes 😊 This is pure pistachio elegance! The photos have a super neat atmosphere: the soft background, the diffused light and the cocktail-style glass elevate the presentation a bunch. The praline adds visual texture and color, and the central framing of the last image is catalog. irresistible!
I invite you to share this photo on your Instagram stories and tag @Scoolinary_es and chef Máximo Cabrera. Your ice cream deserves it!💚

I love how the airy and creamy texture is perceived in the balls, and the contrast of the fluid praline with the whole pistachios adds volume and character.
have you tried other shortbread techniques besides turbinado with a mixer? It might be interesting to compare results and see which one enhances the creaminess you are looking for the most.

keep it up! You are refining technique and aesthetics at the same time, and it shows 😉.

@Sussan Estela Olaya muchas gracias Sussan. ¿Me recomendáis alguna?

Mmmm I love pistachio ice cream and now that I can’t drink milk, if it’s vegan even better. Thanks for sharing Mercedes

This is pistachio paradise! The color, the texture, that pistachio praline on top… it’s everything a nut lover could dream of. 😍
