• I almost didn’t get to post. Here’s my contribution to the #icecreamchallenge: homemade cheesecake ice cream.

It is complex to make ice cream at home, when the refrigerator is small. I’m not a professional, and the hardest thing is to find the texture when it comes out of the freezer. You have to adjust the amount of sugars and know the antifreeze power of each one of them. But you can do it.

A little strawberry syrup gave it the final touch. We loved it

        hello, Luisa Maria! 😊
What a treat to find you in the community with this tempting homemade ice cream.
The presentation is super attractive, with that spiral of syrup that brings color and visual dynamism. You can see the care taken in the shaping of the balls, they are very well done! The natural light and the chosen shot make the creamy texture stand out, although a little more contrast could bring out the details of the veining even more.
what’s the most unexpected thing you discovered while experimenting with sugars and their anti-freeze effects? Your reflection may inspire many of us! 🍨
And if you’re up for it, share this treat on your Instagram stories by tagging @scoolinary_es. we’d love to repost it!💫

        • Thanks for the photographic advice, I have to improve a lot!!! As for sugars, it had never occurred to me to take the temperature of my freezer and doing so helps you, for example, to know if you should put more sucrose or more dextrose. Or even maltodextrin or invert sugar. It has been a discovery for me.

Cheesecake ice cream is a dream, and making it in a small freezer? That’s true dedication. Totally agree, texture is everything and balancing sugars is a real science. You nailed it! That strawberry syrup on top sounds like the perfect final kiss!

Your homemade cheesecake ice cream is a visual delight. The balls have a very well-defined shape, and that strawberry syrup that is integrated in streaks adds contrast and appetite. very well thought out! The tableware also adds to the charm. As a recommendation, if the texture when it comes out of the freezer still struggles, you could try a small percentage of glucose or inulin to keep it creamier without going overboard with the sweetness.

what kind of sugar did you use in this version, have you tried making a base with egg yolks or do you prefer the eggless option? I’d love to hear how you tweak your formula.

Thanks for sharing with the community and joining the challenge 💫.

Se ve fantástico, la bola está bien hecha, está. muy cremoso y el toque del sirope de fresa le da contraste de color y también sabor. Buen trabajo
