      Title: Run, it’s melting!

      Elaborations:

-Hazelnut ice cream, to make it I crushed the hazelnuts until I had a cream (which by itself is already delicious). I took the ice cream base from the Italian ice cream course.

-Sour baked apple with a pinch of cinnamon. To counteract the sweetness of the ice cream. Inspiration: Jordi Roca and his super apple ice cream.

-Salted caramel, as before, to add a different touch and soften the sweetness. And because I love it. And because I had never made it before and it seemed like the perfect moment.

-Digestive cookie sand. Because it had a crunchy point.

-Dark chocolate bonbons in a first attempt at tempering. This is something I have to improve. Even so, they are not too bad.

Following the advice of the wonderful Maloles to take pictures of the ice cream in the “infernal” Seville in the heat wave, I put the air conditioning, plugged in the fan, gave a giant fan to my husband (this is a joke, although it would have been useful), cooled the dish, cooled the glass and plating in the living room, when I had already assembled the set. It still took about 15 seconds to come apart 😂😂 I will repeat the plating in winter or when I move to Lapland escaping the heat!!!

      I hope you like it.

Carolina, you absolute genius! 😍 The flavors, the textures, that balance between sweet, sour, salty and crunchy… it’s a full-on sensory party! And that melting scene? Epic. Honestly, the image of your husband with a giant fan needs to be illustrated 😂 I’m seriously in awe of all the thought and love behind every element. Please don’t wait until Lapland… I want to see version 2.0 this winter!

thank you for bringing us this wonder to the #IceCreamChallenge! The title you chose, Run, it’s melting!!!, is extraordinary: witty, cute and totally spot on .

Your combination of flavors is highly sensitive: the hazelnut cream as a base, the counterpoint of the baked apple with cinnamon, the salted caramel and that crunchy touch of the cookie… all very well balanced and with clear intention. And those little bonbons with your first attempt at tempering, bravo! 👏

The staging (with air, fan and humor included!) is appreciated a lot. Can you imagine this same recipe with pear instead of apple, for an autumn version?

Your creativity and dedication shine brightly, even in the middle of a Sevillian heat wave Keep creating like this! 💫

Well, despite the technical difficulties of Seville’s caló… it’s been very nice… and the combination of flavors and textures is just great 🤗
