what a fine and well-executed proposal!

Your saffron-infused milk ice cream has an impeccable elegance: from the precise shape of the quenelle to the silky sheen that evidences a well-achieved emulsion. The use of powdered milk and atomized glucose to avoid crystallization was a very well thought-out technical wise move. And that touch of orange blossom honey with the toasted pistils not only balances the flavor, but also communicates the concept from the first glance.

The result conveys technical mastery and sensory sensitivity. Are you considering exploring this same base with other delicate spices, such as cardamom or smoked vanilla? It could be an interesting way to further refine the identity of your creations.

thanks for joining the #IceCreamChallenge! ✨

hi Emilio! 🌞 What an elegant, precise and well resolved proposal. The texture of the ice cream looks impeccable, with that sheen that anticipates perfect creaminess. The minimalist presentation with the crunchy base and the thread of orange blossom honey elevates it even more. that saffron is pure gold!

Achieving balance with a spice as potent as saffron is no easy task. Did you try different times or temperatures in sous vide before deciding? What other spices intrigue you to turn into ice cream? And if you’re up for sharing it in your stories, don’t forget to mention @scoolinary_es and join in on the collective inspiration this summer 🍨✨

              • You managed to present it in the form of a quenelle, I feel great admiration for your technique, although the flavor seems to me to be from the world of salty ice cream; I would accompany it with grilled prawns.
