In the Scoolinary Brigade we also set ourselves challenges. This time the challenge was to make a vegan chocolate and fruit cake. I think it’s the first time we baked sweet, and it was about time… there were some people who made really nice things
Here’s mine! Despite the heat yesterday in Spain we managed to pull it off

@Mercedes Minaya Palacios it is true that not using egg because I was vegan, it is a little drier than with egg, but between baking soda and vinegar it was more or less achieved. But between the baking soda and vinegar it was more or less achieved. Any other tips to replace egg?

This vegan cake is a display of color, texture and balance. The sponge cake base looks fluffy and well leveled, and the choice of fruits, along with that whipped cream, adds freshness and volume without saturating.
I love how you achieved a natural but careful presentation, with little touches like mint and red dusting that enhance the whole dish. And on top of that, with how hot it was yesterday ☀.
thanks for inspiring us from the Brigada! 💪 These kinds of challenges push us all to go one step further.

spectacular! I was just going to ask you what the biggest challenge was in making it, but seeing it so perfect, I don’t know if there’s any point to the question anymore! Still, are there still challenges even as a professional?

¡Espectacular!

@Sol Damiani the biggest challenge to cook remotely with the brigade and get it right for everyone!!! And then to a lesser extent to get a fluffy texture without eggs….
