I had some leftover roasted pumpkin in the fridge and looking for what to make I saw the recipe for Pumpkin and Oatmeal Pancakes so I said and done.

I filled them with dark chocolate scented with chai infusion.

what a great idea to use up that leftover pumpkin.

Your version of the Pumpkin Oatmeal Pancakes looks spectacular, and the chai-infused dark chocolate filling sounds like a warm and comforting combination, perfect to go with the softness of the batter.

Also, the photos are gorgeous: the soft light, the neutral background and the texture of the dish make everything look very neat and appetizing. thanks for sharing!❤

hi Mer!!! 🎃 How wonderful to see how you transformed a “leftover” into something so appetizing. The browning of the pancakes is perfect and that chocolate chai filling…makes you want to take a bite right now! The mixture of warmth and spices is delicious 😍

lana Mihajlović thank you very much Lana. I perfumed the chocolate by putting in a vacuum bag the chocolate together with the chai infusion preparation and then I put it in a pan with water over not too high heat, controlling the temperature until it melted and then I took it out of the bag and strained it.

It takes the flavor of the infusion. Another day I made some tablets and part of one of them is what I used for the pancakes.
