• This is my tomato sorbet, I presented it as a natural tomato. The final presentation I made in a tomato carpaccio with burrata. It gave a spectacular freshness to the salad. Glazed with white chocolate and cocoa butter and red dye. On another occasion I made it with raspberry inspiration, but the color was too light and it added flavor. I didn’t use a mold because I made little bags with cling film to give it shape and the hemisphere mold I used to support them while it was in the freezer. #icecreamchallenguer

What a joy to have you back in the #icecreamchallenguer, double thanks for continuing to join us with so much enthusiasm and creativity! This tomato sorbet presented as a real tomato is genius.

The glaze has a smooth and uniform finish, and that little stem you placed as a finishing touch… it’s a delicious detail! The decision not to use a mold and to assemble it with film shows a lot of ingenuity (and pulse!).

As a suggestion, you could play with a plate of a more neutral color or a plain background to make the tomato-ice cream stand out even more, and take care of the light (maybe take advantage of the natural light from a window), because the idea deserves it all!

have you thought about trying this technique with other sweet vegetables such as beets or carrots? They could give an equally stunning result.

we love to see how you evolve from one challenge to the next! ✨
