Roast suckling lamb. Sometimes I experiment with the embers and the closed barbecue at controlled temperature and indirect fire; I have also cooked it sometimes in sous vide cooking… but most of the time I must confess that I use tradition and conventional oven. Seasoned with salt and pepper, sprinkled with a mixture of crushed garlic and lard. Two hours in the oven and a brush of vinegar for the last 15 minutes. And with its potatoes. A delight.

Cordero lechal asado.

The cooking looks juicy and well done, with that even browning that invites you to break the silence with the first cut, andthe potatoes accompany it in a very traditional way.
A little trick: if you try a final touch of high heat or grill, you could further enhance the crispy texture of the lamb skin without drying it out. And if you’re up for it, you could take a little care with the lighting to bring out those warm, flavorful tones.
have you ever tried finishing the lamb in embers after the oven to add smoky notes? It could be a good combination of tradition and experimentation.
You’re at a very interesting point of technique, and it would be great if you keep challenging that solid foundation you have, thanks for sharing. 🙌
