      I share with you one of the most delicious rice dishes in the world: rice with lobster. There are many different ways to make it, usually broth. Although I am inclined to leave it, not dry, but not brothy. Just a bit mellow.

      I prepared this one a long time ago, it’s not just now. For me it is a recipe with history, to which I return at special moments: either to celebrate, or to take away your sorrows if you have nothing to celebrate 😂. I can’t wait to make it again.

          Thank you for sharing this special dish with the community.
          The mellowness you achieved in the rice is very well balanced, and the lobster has a spectacular presence, both in size and placement.
          what is your favorite trick for achieving that mellow texture without overcooking the rice? I’d love to know if you infuse it with any homemade fumet or if you use a technique that works for you every time. 🧑‍🍳✨

            @ lo más importante, dedicar tiempo al sofrito, yo le pongo cebolla (que ayuda a que quede meloso, si quieres un arroz seco, mejor sin cebolla), pimiento verde y rojo, tomate natudal y una cayena. Luego sepia.

            Un paso clave, flambear con coñac. Luego ya el arroz, los trozos de bogavante y el fumet, si es casero genial, y si no que sea de calidad.

            Creo que no olvido nada, te lo cuento de memoria, no tengo a mano mi recetario, que estoy de viaje de trabajo… y la verdad es que tengo memoria de pez

              @beatriztorijagmail-com Bea, qué maravilla leerte!
              Mil gracias por compartir todos esos detalles, sobre todo estando de viaje… ¡se nota la pasión con la que cocinas! ❤️ Me encantó lo que comentas del sofrito, es verdad que dedicarle su tiempo marca una diferencia enorme, y ese truco de la cebolla para aportar melosidad es de esos que vale oro. 🙌
              El toque del coñac flambeado suena espectacular, y suma un punto de aroma y profundidad que seguro eleva todo el plato. ¡Ya me imagino ese momento en la cocina, con el fuego y el aroma envolviendo todo!
              Te agradezco muchísimo que lo contaras así, tan espontáneamente.

              Un abrazo grande, y que sigan los buenos sabores (¡y los buenos viajes también!). Cuídate mucho.😊

          • A real delicacy!!!
