I can’t think of a better way to start the week than with these zucchini zoodles with pesto. Instead of pasta, this zucchini is spaghetti squash. They are blanched for just a few seconds and then in ice water. The idea is not to cook the zucchini, but to make its texture give a little. And the pesto is traditional. Garlic, basil, parmesan cheese, extra virgin olive oil, salt and pine nuts.

The texture of the zucchini is just right: supple but full-bodied, just what you’re looking for with that quick blanching. The pesto looks creamy, with that sheen that betrays good oil and a balanced mix. And the pine nuts on top… give it the perfect crunchy touch. If you want to play a little more with the presentation, you could try making a nest with the zoodles or give them some height on the plate to make them stand out more.
what is your favorite cut or technique with vegetables?
bea, thanks for sharing! Your dish is full of love and attention to detail 🧡.Level:Scoolinary Team
