How important is the moment of frying the croquettes. In his ‘croquettes’ course, Chema Soler describes it very well. When it seems that the catastrophe is about to happen, that is, when you see that your croquettes are about to break, even some of them start to break and the drama of the dough coming out seems imminent… that is the moment that tells you that everything is going well. That’s when you have to take them out.

As tips: fry with hot oil, without smoking, add little to the pan so that the temperature does not drop and be generous with the oil, almost covering the croquettes (yes, I know I have not followed this advice very much 😅)

That moment is unique and when you see the doradito knowing that everything went well…. 🙌

            Beautiful picture 😉

That moment of frying croquettes really is the ultimate test of patience and skill! Your tips are golden! Hot but not smoking oil, not overcrowding the pan, and plenty of oil to give that even, crunchy finish. Honestly, those little imperfections just add character and hey… every croquette tells a story! 😅
