      Almond brioche with vanilla pastry cream. Recipe included in the course ‘Croissants and pastries’ by Antonio Bachour

      Profile: amateur

      And with this brioche I finish the brioche trilogy that Bachour prepares in his course. The dough is truly fabulous, very very fluffy and with a delicate and deep flavor. The combination of the almonds and the vanilla pastry cream… I think it makes this brioche my favorite. It is delicious.

      The biggest challenge was adapting the oven time to my oven at home. I had it a little longer than Bachour indicated. I had the feeling that it was a little undercooked and I lengthened it a few minutes more. I was afraid to overdo it… but there was no drama. They were perfect.

        beautiful work Bea! 😍

        It shows all the love and dedication you have put into each step. Your brioches look fluffy, golden and with a very well developed crumb. The combination with the vanilla pastry cream and almonds, as you rightly say, is a delicious classic that is also reflected in the final finish.

        I find it very valuable that you share your experience adapting the baking times. That shows sensitivity in reading the product, something fundamental in pastry making. Have you tried measuring the interior temperature of the brioche with a thermometer? It can help you gain precision without fear of overdoing it.

        which of the three brioches would you stick with if you had to repeat it for a special occasion? Congratulations on this very successful tour! 🌟

          @sussan_scoolinaryteam gracias Sussan. Si, la verdad es que tenía tantas ganas de que salieran bien, (y tanto miedo a que no) que seguí todas las indicacionds del chef Bachour al dedillo.

          Respecto al horno, no, no lo medí… sobre todo porque no pensé en que mi horno igual requería más tiempo hasta que no se cumplió el tiempo indicado por el chef… y de aspecto los vi muy blanquitos, aun sin dorar… así que fue sobre la marcha, decidir dejarlos unos minutos más.

          Y respecto a cuál me gustó más… es difícil, todos son distintos y muy ricos. Pero creo que me quedaría con el brioche de azúcar, el que no va relleno, y se hornea con unos daditos de mantequilla… me parecieron deliciosos 🤤

            @beatriztorijagmail-com ¡Qué bonito leerte, Bea!
            Se nota que trabajaste con mucho cariño y atención al detalle. Hiciste muy bien en ajustar el horneado según lo ibas viendo, eso también es parte del aprendizaje 💛
            Y sí… ¡el brioche de azúcar es una delicia total!
            Gracias por compartir tu experiencia, nos encanta acompañarte en este camino.🫶🏻

          This is absolutely incredible! Finishing the brioche trilogy must feel so rewarding, especially with such a delicate and flavorful dough. Great job adapting the baking time too. Knowing your oven is half the battle.

          what a lovely way to close your brioche trilogy! 💛 The crumb looks so fluffy and light, and the pastry cream has a sheen that screams “eat me now”. The presentation with the slivered almonds and sprinkle of powdered sugar is full of charm and goes beautifully with the colorful tableware and flowers in the background – you can tell how much dedication and love you put into it!

          I’m glad to hear that you were able to adapt the baking times to your equipment and that the end result was so good. congratulations!

            @soldamiani gracias Sol!!! La crema pastelera de vainilla quedo suave y muy rica… y aún con eso, era aún mejor el bocado del brioche solo… quedó tan ligero y esponjoso.

            La receta del chef Bachour es extraordinaria 😍
