alejandro, what a pleasure to see what you are achieving after the course! It is evident that you are applying what you have learned with intention and creativity. This test looks very well done: the base has an attractive color, with good edge development and a baking that speaks of good oven management. And what an original combination with the balsamic reduction and fresh basil, it gives a unique identity to your pizza!
I like that you were encouraged to try it in your work environment, that also adds real experience. How did you feel the behavior of the dough in the work environment compared to the practices of the course?
As a small tip for further fine-tuning: you could take a little more care with the distribution of the sauce and toppings. It looks generous and tasty, but in some areas it seems to concentrate more, which can affect the cooking or the balance of flavors in each bite. Sometimes, less quantity but better distributed helps everything to be better appreciated.
congrats on the commitment to your technique!!!
Thanks for sharing your process, we hope you continue to show your progress and explorations, they are very valuable to all . ❤️

Love the creativity in this pizza! Combining Neapolitan sauce with ground beef bolognese and bacon sounds like a flavor powerhouse. The touch of basil and balsamic reduction must bring it all together beautifully. Perfect test to sharpen your dough skills.

¡Hola, Ale!
¡Gran trabajo!
