Brioche Saint Tropezienne with mango. Recipe included in the course ‘Croissants and pastries’ by Antonio Bachour

      Profile: amateur

The brioche dough turned out perfect and the mango pastry cream with very good flavor and body. It came out much better than I expected, with a delicate flavor and very fluffy. The biggest challenge was where I least expected it… in finding some of the ingredients. In fact, I wasn’t able to find granulated sugar… I thought it wasn’t a strange ingredient, and yet I couldn’t find it. So the brioche was baked with a little bit of sugar for enicma.

You’re on fire, girl! If I liked the previous brioche, this mango one is the bomb. It has been wonderful. Congratulations again👏

As for the sugar, maybe you didn’t find it in granulated sugar, I’ll give you a link to the website where I usually buy my baking products. Look at pearl sugar, it is very good.

The shipping is very fast, if you order before 18h. you have it at home the next day 😉

@undefined gracias Maloles!!

what a beautiful brioche, Bea! It looks super fluffy and with a very well achieved crumb. In addition, the mango pastry cream looks with a very appetizing color and texture, I’m sure it was delicious!

I think it’s great that you also share the challenges you faced, such as the granulated sugar issue. Just for cases like this, there is a homemade way to imitate it: you can mix 150 g of powdered sugar with 2 tablespoons of water to form a compact dough, then you pass it through the grater and the dough is in small pieces, let them dry on paper towels for a day and, if you want a more uniform size, you can give it a very brief touch in the processor. Although it is not as resistant to baking as the commercial one, you can add it on the surface with a brush of egg yolk about 5-8 minutes before taking the brioche out of the oven. This way it adheres and resists the heat better.

would you like to try this homemade version next time? I’d love to hear how it turns out for you.

congratulations on a job well done! ❤️

It’s amazing how even the simplest ingredients can turn into a challenge sometimes, but you adapted like a pro. That’s the spirit of the #BachourChallenge!
