• During the Sushi and Sashimi course at Scoolinary, I had the privilege of learning from one of the great masters of Japanese cuisine: Chef Hideki Matsuhisa. With a clear, meticulous and passionate teaching, Chef Hideki guided me step by step in the art of traditional sushi, transmitting not only techniques, but also respect for the product and Japanese culture.

Thanks to his lessons, I was able to master the preparation of classic pieces such as nigiri, perfecting the cutting of the fish, the cooking of the rice and the correct molding with my hands. In addition, I was able to prepare an uramaki topped with salmon trout, achieving a perfect balance of flavor, texture and presentation, as can be seen in my photos.

Your testimonial about Chef Hideki Matsuhisa and the course is very valuable; we are glad to know that his clear and passionate teaching helped you to move forward with such confidence.
The uramaki with trout and the nigiris you mention sound and look delicious. What was the most challenging part of the process for you and how did you overcome it.
