I’m still feeling sick, taking antibiotics… so today my body was asking for something healthy, light, but tasty. We have prepared a sea bream in salt. It has been a team effort, I have been in charge of the fish and my husband of a salad to accompany it.

I tell you some of my little tricks: to the salt I add herbs (rosemary, this time) and a beer… yes, a can of beer! It helps the salt to amalgamate and adds a very rich flavor. Today I used beer without, because taking antibiotics you shouldn’t drink alcohol. Surely it would not have affected, because with the heat of the oven evaporates and after all, the salt with the beer melts … but when in doubt, I preferred to use one without.

I put a photo of the salt mixture, the trick of the little window to see the eye of the fish, which is the one that indicates if it is done and ready, and the result, when I take out the loins and dress them with a drizzle of extra virgin olive oil. It has fixed my body!!!!

Very good salt fish, my tip is to add egg white to the salt, I learned it in a class with chef Sergio Fernandez.

Feel better friend, I hope you continue with the pampering

Beatriz, thank you so much for sharing this dish with so much detail and affection, even when you’re feeling down!
You give us not only a delicious and healthy proposal, but also a lot of valuable tricks that make all the difference in the kitchen.
The presentation was beautiful, and that final touch with extra virgin olive oil… luxury! I thought it was great that you used non-alcoholic beer to adapt the recipe to your situation, great idea!

a big hug and may you recover very soon! ❤️

How delicious that sea bream in salt . I also put that little window of the eye and let him free the top wing 😉.
We love the way it tastes.

And even with antibiotics, you share us a masterclass of real, tasty and conscious cooking! The thing about the eye as a “little cooking window” I loved 👁️🐟
The texture of the flesh of that fish you can almost feel in the photo 💛✨
