I have been taking Alta Cocina de Autor courses and here I prepared an onion soup with a different style. I loved this style because of the combination of the cream cheese sphere in the center and the light touch of the thyme sprigs. When preparing the onions we caramelized them to give another touch of flavor and color to the soup. It was a challenge to prepare the cheese sphere since the temperature in my tropical country is against the clock before it melts.
He estado tomando cursos de Alta Cocina de Autor y aquà preparé una sopa de cebolla con otro estilo. Este estilo me encantó por la combinación de la esfera de queso crema en el centro y el toque ligero de las ramas de tomillo. A la hora de preparar las cebollas la caramelizamos para darle otro toque de sabor y color a la sopa. Fue un reto preparar la esfera de queso ya que por la temperatura de mi paÃs tropical es contrareloj antes de que se derritiera.

¡Esta sopa de cebolla es una delicia visual y conceptual! 🤩 La caramelización aporta profundidad, y la esfera de queso en el centro está perfectamente ejecutada (¡más aún considerando las condiciones del clima!). La decoración crujiente suma elegancia y textura, y el tomillo le da ese guiño fresco que cierra el plato con armonÃa.
El emplatado está muy bien equilibrado, y la vajilla granate que elegiste es un acierto total: enmarca el plato como si fuera una obra de arte y realza cada elemento de forma impecable.¿Asà que tienes un local de pastelerÃa?
