I share with you this dish from the weekend. I wanted to make grilled fish like this, with direct fire and no more elaboration than a few cuts, and the fish painted with a little oil. And the salt at the end. I had wanted to do it since I ate it this way in Portugal. It was not the same… but it was very tasty😇

Portugal really knows how to bring out the best in simple seafood, and even if it wasn’t exactly the same, I’m sure yours carried that rustic charm and smoky soul. Sometimes, it’s less about perfect replication and more about capturing the memory and it sounds like you did just that. 😍

My mother and grandmother had a saying that they used to tell me when I was a child when they prepared whole fish, it was: “to talk and eat fish you have to be very careful” and it made reference to the fact that you have to be careful of the bones when eating, I think that’s where I started my extreme concentration training hahaha.
But it is delicious to eat a little fish just as you presented it, with a simple dressing and the ember is in charge of giving it love and warmth. Did you accompany it with any garnish?

what a beauty of golds! 🐟🔥
Direct fire cooking has that rustic magic that connects with the essentials. Good for cheering you up! What’s your number 1 when it comes to grilled fish: crispy texture or inner juiciness?PS: Chef Bachour is going around asking if your pastry tools are under the grill or just out of plane 😂🍰🔥.

¡Qué belleza de doradas! 🐟🔥
