The classic medialunas de manteca in the best Argentinean style ! I live in Uruguay but I practice an Argentine recipe and this is a beautiful result.

how good those croissants look, Daniela! And how nice that even browning and the neat shape. How nice that you are applying an Argentine recipe from Uruguay, that shows how much you like what you do! How was the process of rolling the dough, was there anything that was more difficult or that you repeated to make it like that? And I was also wondering, is there any difference between the half moons and the classic croissant?

Thank you for sharing your result and we show the photo that was beautiful.❤️

        • i was practicing for 3 years until I found the perfect recipe in my school they made the croissants with water and I was not convinced one day listening to Bachour’s course he taught me that milk achieves a richer flavor and tenderness in the dough.this is true and from then on it was the way to perfection as far as croissants are concerned. Another thing that I apply is Bachour’s technique as far as the lamination of the dough is faster thanks to the teachings of the Croissant course and I apply it to the croissant because of the basic concept of analogy. Regarding the difference one day I compared both doughs and the difference in ingredients is the vanilla essence and the honey! in this case the honey adds flavor and moisture to the dough making it more tender.

daniela-Duran What a great journey, Daniela! I can see the commitment you had during these three years to perfect your croissants. It is very valuable how you knew how to take the best of different teachings such as those of Chef Bachour and adapt them with your own criteria. That approach of comparing, testing and applying analogies between recipes shows a deep and very practical understanding. Thank you for sharing your experience, it is sure to inspire more than one in the community.❤️

Perfect 😍 The even golden color, the well-defined flakiness and the right shine make them a true homage to the classic croissant. The mastery of the technique and the respect for tradition are evident. And if you fill them with ham and warm cheese, they become total glory! 🇦🇷🇺🇾
PS: Bachour sent me a message asking me when you will join the challenge ☺

        • Those Croissant are amazing. Did you get an internal picture? I love Antonio’s lamination technique.

I do exactly the same, but I don’t fold it. When he does that second folding, instead of folding the dough together, I cut my pieces and stack them but I make sure they are placed in the correct order as when they are folded.
