A simple but exquisite delicacy…green plantain, the one that is larger, has thicker and harder skin, you let it ripen for a few days until it is yellow and starting to turn black. Peel it and cut it into two or three pieces and open each one to place a strip of cheese, preferably ripe. Place in the oven at 180 degrees between 12 and 15 minutes and the last minute, only about 30 seconds, grill … it is not dessert, although it could be … it is caramelized and part of the cheese too, we use it to contrast strong flavors as accompanying a good stew …. if you get soft and creamy this 👌.

That sounds absolutely delicious and full of flavor! 😋 The combination of sweet, caramelized plantain and ripe cheese must create the perfect balance between savory and sweet. I love that it’s versatile enough to pair with stews or be enjoyed as a dessert! The grill touch at the end for that crispy finish is genius! 👌✨
