• For the Japanese Cooking Course: Recipes with Umami…I prepared dashi, it was a bit cloudy with the nori seaweed, but the flavor was good, and with the dashi prepared I embarked on a miso soup, made with miso, and the mushrooms and fungi I had on hand…tofu, some green onion to increase aromas…a lot of umami….

I like how you were encouraged to prepare the dashi and then use it in a miso soup with what you had on hand. Sometimes those spontaneous combinations are the most surprising.
did you feel that the nori flavor was too pronounced or did it balance well with the rest of the ingredients? I was curious to try it.

        good job!🙌🏻

This sounds like such a soulful cooking experience! The miso soup with mushrooms, tofu, and green onion must’ve been incredibly comforting. Well done!
