Looking for recipes or ideas to make, I found this recipe that caught my attention.
In my case I have flavored them with thyme and fresh rosemary from the plants we bought a few days ago.
As for the wine, the chosen one has been the Malvajío “Tinto de Garaje”, with 16 months of aging in French oak barrels of Syrah variety.
It is an unfiltered wine from the Malvajío winery in Malaga. The history of the name of the wine, now I share it with you in a photo.
Caramelized potatoes with orange and red wine
Ideal for an appetizer or as a garnish for, in the case of the second photo, a grilled pork tenderloin.
Ingredients: 250g of small potatoes, 15g of butter, 15g of olive oil, juice of 1 orange, 60g of a good red wine, salt, thyme and fresh rosemary
Put the oil in a frying pan with the butter and, when the butter melts, add the potatoes, well washed and with a little salt. Cook covered for about 25 minutes. Add the sugar and then the orange juice, wine, thyme and rosemary. Turn up the heat and cook over high heat until the sauce is reduced to a little less than half.
Cover and lower the heat to the minimum and cook for a few more minutes.
They are delicious.

This recipe sounds absolutely amazing! The combination of caramelized potatoes with orange and red wine is so unique and flavorful. Adding thyme and fresh rosemary must give it such a fragrant depth. And that wine choice sounds like the perfect pairing. 🍷 I can only imagine how delicious the whole dish must be, especially with grilled pork tenderloin! Definitely giving this a try!

Mercedes, I like how you tell the whole process and how well you combine the recipe with that special wine.
I think it’s great that you used fresh thyme and rosemary from your own plants, that always gives a unique and more personal touch to the dishes.
I was thinking that it could also be good with sweet potato, what do you think, would it be good using another tuber? Thanks for joining the challenge those chips look great 😊.

@Sussan Estela Olaya muchas gracias Sussan.
