Name of the dish: “Patatas meneás”

Ingredients: garnish potatoes from Sanlúcar de Barrameda, onion, bay leaf, salt, sweet paprika, hot paprika, in my case I used pancetta, although in Salamanca they are usually made with jeta.

      Techniques: cooking, pressing

      Profile: Amateur

With this dish I follow in the line “back to childhood”

In some places in Castilla, they put these potatoes, meneás or revolconas, depending on where you eat them. I have always loved them, but I didn’t know how to make them.

One day we were in a village in the mountains of Salamanca and when we were on the road with the car, I saw a venta where I used to go with my family when I was little (the 7 members of the family in a green Ebro van 😂😂) Anyway, we stopped there to eat and they put these potatoes as a garnish, and I asked them for the recipe. And they gave it to me! Perfect, without omitting details… I will be eternally grateful to them!!!

Here is my first contribution to this challenge

what a beautiful journey to the heart you shared with us, Carolina! 🚐🥔✨ It gave me a smile to read your story with the green Ebro and those wiggly potatoes full of memories. What a special way to bring a little piece of childhood to the plate! The texture you achieved looks super appetizing, with that vibrant color that invites you to take spoonful after spoonful.

would you dare at some point to experiment making a version of the meneás potatoes using another type of jowl or maybe some different sausage?

thank you so much for sharing this experience and encouraging you to participate in the challenge! It’s a luxury to be able to read recipes that also come loaded with so much emotion and affection. that also feeds the soul! ✨

carolina, what a wonderful dish and what a trip back to childhood you gave us! ✨ Not only did you manage to capture the authentic essence of the meneás potatoes, but you also managed to get a DIVINE zenithal photo! (My favorite, without a doubt 😍).

The color, the rustic texture, those crispy touches of pancetta… it all screams flavor and tradition! In addition, the plating on that base of natural fibers enhances even more that feeling of warmth, of lifelong cooking made with love.
do you usually give an extra personal touch to the traditional recipe or do you like to respect it just as it was told to you at the time it was sold?

What a beautiful way to reconnect with childhood memories through food! 🥔💫 Patatas meneás hold such a special place in your heart, and I can feel the nostalgia in your story. How amazing that you were able to get the recipe from that venta, a little treasure from the past.

The dish itself sounds like the perfect comfort food, with that rich, savory flavor. And the story behind it, with the green Ebro van and family trips, makes it even more meaningful. I can imagine the joy of recreating it in your kitchen, bringing back those fond memories while adding your own twist. 👌💖
