Purple Potato: Textures and Flavors with Mullet Flakes
#PotatoChallenge
Profile: Amateur
This dish is a celebration of textures and flavors where the versatility of the violet potato is presented in three forms: crispy, creamy and fresh providing contrast and depth. They accompany the red mullet which brings freshness and a marine touch. The potato paper covers its back like flakes.
Another of my experiments was to make a purple potato paper but with less color. I was testing and finally came out with this paper that simulates the scales of the mullet. To do this, I cooked a normal potato together with the violet ones and then, as the color was still not what I was looking for, I mixed the two. I prepared the paper, superfine, almost transparent. I thought it would burn but I was very attentive this time ..
And the magic happened. My grilled red mullet was going to have its scales. I protected the tail with aluminum foil so it wouldn’t burn.
The potato and cheese bites with olive oil pearls and blackberry salt that I showed you in the previous post and a violet potato cream (I served more of this cream on the side). San Jose wand flowers and a pinch of parsley oil powder finish completing the dish where textures and flavors come together to enjoy a unique experience.
Ingredients: Purple potato, white potato, extra virgin olive oil, water, water, common salt, manchego cheese, cream, salt flakes, blackberries, parsley, edible flowers.
Techniques: Cooking, Emulsion, Laminated, Dehydrated, Crushed
It was quite an experience to make this dish. I thought about it, made it and enjoyed it that day when everything was calm 💫.

Patata Violeta: Texturas y Sabores con Salmonete en Escamas
#PatataChallenge
Perfil: Amateur

what a display of imagination and technique, Maloles! 🤩 This dish is living proof that when you cook from calm, the result flows without friction: everything in your plating breathes balance, delicacy and poetry.
I find the creativity of transforming the potato into an almost ethereal paper that becomes “flakes” for the red mullet fascinating – and absolutely inspiring! In fact, I can perfectly imagine this same potato paper in a dessert, playing with sweet and light textures. Have you thought about it? It would be a natural evolution of your genius.
The composition of the dish, the play of textures, the tones, and even the detail of protecting the tail of the fish to preserve its integrity… everything speaks of a thoughtful and heartfelt cuisine. 👏 (I think we should create a Badge for this category “Thoughtful and heartfelt cooking” 🤔)
Endless thanks for continuing to nurture this #PotatoChallenge 🥔 Don’t forget to share this piece in your stories and tag us with @scoolinary_es and the hashtag #patatatachallenge. you make the potato touch the sky! 🌟Level:Scoolinary Team
¿Te lo has planteado?

The way you’ve showcased the purple potato in three textures is brilliant, and I love the creativity with the potato paper that mimics mullet scales. The balance of textures between crispy, creamy, and fresh must be absolutely divine! Plus, the pairing with the grilled red mullet, olive oil pearls, and blackberry salt takes it to a whole new level of sophistication. It sounds like the kind of dish where every element plays its part in creating an unforgettable experience. You’ve truly turned this into something magical! ✨
