A few days ago I was taking pictures of all the processes of a dish, one of the dishes of the previous challenge. It was a squid tartar, from Paolo Casagrande’s course. Until recently I had never dared to get into haute cuisine, or to prepare the recipe of a great chef. It is not everyday cooking, far from it, but it is a challenge for an amateur. And it is a joy to finish a dish of these characteristics well. I think there are almost all the processes, before plating everything.

1- Make dashi broth with kombu seaweed and dehydrated bonito

2 Clean the squid and separate the squid for tartar and the rest, with skin, for the broth.

3 Make a squid broth with poached onion

4 Once strained, reduce broth until you have an unctuous and thick elixir

5 Cook oil with kaffir lime leaves at low temperature

6 Cook amaranth seeds in the dashi broth

7 Stretch the amaranth and dehydrate it

8 Cut squid, dress and tartar in savarin. Freeze

9 Cook egg yolks at low temperature in sunflower oil

10 Break the dehydrated amaranth like a crumble

what a great preparation, Beatriz! 🐙🔥 How nice to see how you threw yourself with such determination to prepare a high-level dish, and on top of that, following the steps of a great chef. That takes courage and a lot of desire! And the coolest thing is that you documented it all step by step, that takes a lot of courage! 📸✍️

The whole process sounds like an adventure of flavors: from that umami-filled dashi, to the amaranth crumble, a super interesting combination! The idea of cooking the yolks at low temperature in sunflower oil left me open-mouthed… were you surprised by the result when you tasted them? Was it easy to control the point or did it cost you a bit? That part seemed to me a challenge with all the letters.

Thank you for sharing this experience with so much dedication, I can tell you took the time to learn and enjoy the journey, that’s the best of all! 🧡

@sussan_scoolinaryteam thank you very much Sussan! Regarding the yolks, the truth is that the chef’s instructions only said to cook at low temperature in sunflower oil for 5 minutes at 65°… but it didn’t say how. I thought that in a vacuum bag they would break and so I used a jar. I was strict with the time and temperature, I didn’t do any more tests. Fortunately, I did make some extra yolks, because in the process of handling, removing from the jar, draining the oil, a couple of them broke 😅. The texture is excellent, it is raw … but without being 100% raw

This kind of publications are the ones that make me feel deeply grateful to be the Responsible of this Community. Because it’s not just about a dish, or a well-executed technique-what you are sharing is a true *act of dedication*, of respect for the process, and of love for cooking.

Recording each step of this recipe was not only a meticulous exercise, it was also a way of honoring the learning. And you did it with a clarity and dedication that is contagious. That passion that led you to dare with a haute cuisine recipe, to clean the squid with precision, to infuse oil with kaffir lime leaves, to cook amaranth in dashi broth, to dehydrate it, break it, *feel it*… is the essence of what we are in this community: people who cook not only with their hands, but with their soul.
Thank you for letting us see this process up close. Thank you for making the invisible visible: that time, that patience, that genuine desire to improve and challenge ourselves. This post is, without a doubt, a master class of passion and perseverance.
And while we’re at it… what are you up to for the #PotatoChallenge? We’d love to see what wonder you could create with the most humble ingredient of all 🥔✨.

@soldamiani thank you from the bottom of my heart, Sol. That genuine desire to improve and challenge yourself in the kitchen of which you speak, was already there before because I love gastronomy, but this Community has multiplied it by 1000. 🥰🥰🥰🥰 Regarding the potatoes… let’s see if I make time this weekend to cook, although I have not been able to think much these days, I’ve been on medical. But yes, some potato… how can I not cook? 😆😆😆
